Sodium is an essential mineral and electrolyte that the human body needs in relatively small amounts. Although sodium is often discussed mainly in connection with salt and high-sodium diets, sodium itself performs several important functions in the body.
The goal is not to eliminate sodium. The goal is balance.
Sodium works closely with other electrolytes, particularly potassium, to help maintain fluid balance, nerve communication and normal muscle function.
Sodium helps regulate the movement and balance of water inside and outside our cells. This contributes to maintaining normal fluid and blood volume.
Our nerves depend on sodium and potassium moving across cell membranes to generate electrical signals.
These signals allow the brain, nerves and other parts of the body to communicate.
Sodium contributes to the electrical processes involved in normal muscle contraction and relaxation.
Sodium is one of the body's major electrolytes. It works alongside potassium, chloride, magnesium and calcium as part of the body's complex system for maintaining normal cellular function.
Sodium deficiency from diet alone is uncommon for most people eating a typical Canadian diet.
For many people, the greater concern is consuming too much sodium, particularly from processed foods, restaurant meals, sauces, cured meats, snack foods and foods containing substantial amounts of added salt.
Naturally occurring sodium in whole plant foods is generally much lower than the amounts found in heavily salted or processed foods.

Dandelion is a familiar plant throughout Ontario. Its leaves can be harvested while allowing the established plant to continue growing.
Dandelion is also suitable for containers and small-space growing, making it useful for exploring nutrition beyond Ontario's traditional outdoor growing season.
Broadleaf plantain is commonly encountered in Ontario and has a long history of traditional use.
Young leaves can be used as edible greens when the plant is correctly identified and harvested from a clean, appropriate location.
Narrowleaf plantain is another familiar Plantago species found throughout Ontario.
Its narrower leaves make it easy to distinguish from broadleaf plantain once you become familiar with the two species.
Mullein is easily recognized by its large, soft and heavily textured leaves.
The fine hairs covering the leaves can irritate the mouth and throat, so mullein should not simply be treated as an ordinary salad green. Proper identification, preparation and intended use are important.
Sweet basil is particularly well suited to indoor growing.
It can be grown in containers or hydroponically with sufficient light, warmth and nutrients, while regular harvesting can encourage continued growth.
Peppermint can adapt well to containers and indoor hydroponic growing.
Its vigorous growth can provide repeated harvests throughout the year when appropriate growing conditions are maintained.
Many hot pepper varieties can be grown indoors throughout the year with adequate lighting, warmth and growing space.
Growing peppers indoors can extend production far beyond Ontario's normal outdoor growing season.
Carolina Reaper is a cultivated Capsicum chinense pepper that can also be maintained indoors under appropriate growing conditions.
Its extreme heat means very small quantities may be sufficient when it is used as food, and careful handling is important.
Plants do not manufacture minerals from nothing. They obtain mineral elements from their growing environment.

Sodium is a good example of why nutrition is about balance rather than simply getting more of everything.
Our bodies require sodium for fluid regulation, nerve signalling and muscle function, but most people do not need to deliberately seek high-sodium foods.
Growing fresh herbs, greens and other edible plants can instead contribute to a varied diet containing many different vitamins, minerals and naturally occurring plant compounds while giving us greater control over how much salt is added during food preparation.
